The Breed

One of Only Four True Wagyu Breeds

Akaushi is one of only four breeds classified as Wagyu in Japan. Known for its exceptional marbling, rich flavor, and tender texture, Akaushi produces beef with a higher concentration of oleic acid, the same heart-healthy fat found in olive oil.

Our herd is 100% purebred Akaushi with zero crossbreeding. Every animal is DNA-tested and registered to verify its genetics trace directly to the original Japanese bloodlines. When you're assigned an animal, you'll receive access to its purebreed DNA certificate through your customer dashboard.

Each animal spends its first 18 months on open pasture in the Texas Hill Country, grazing naturally. Then it enters a carefully managed finishing phase of up to 12 additional months on a premium diet designed to develop the exceptional marbling that defines true Wagyu beef.

"Akaushi" translates to "red cattle" in Japanese, and the name tells you everything.

Whole Share

A standard chest freezer or large upright freezer. We recommend having your freezer plugged in and running to temperature at least 24 hours before delivery.

Storage Tips

Set to 0°F or below. Properly stored vacuum-sealed beef maintains peak quality for 12 months or more at this temperature.

Organize by cut type. Group steaks, roasts, and ground beef in separate sections or bins. Label what you plan to cook first.

Thaw in the fridge. For the best results, move cuts to the refrigerator 24 to 48 hours before cooking. Never thaw on the counter.

After your animal is processed, we confirm the exact hanging weight and calculate your final price at the per-pound rate ($12.00/lb for whole, $14.00/lb for half). Your deposit is applied to the total, and you pay the remaining balance before we ship. Shipping costs are added separately based on the processor's rates and your location.

Hanging weight is the weight of the carcass after initial processing, before cutting into individual portions. Take-home weight is approximately 60 to 65% of hanging weight. The difference accounts for bone removal, trimming, and moisture loss during aging. The exact take-home yield depends on your cut selections, whether you choose bone-in or boneless cuts, and how much trim the processor removes. Every animal is different.

After checkout, you'll be guided through our custom cut sheet form. It walks you through every section of the animal, letting you choose between steaks, roasts, or ground beef for each primal. You pick steak thicknesses, roast sizes, how much sausage you want, and more. A live yield tracker shows you exactly how your choices affect the final breakdown. You can save your progress and come back anytime before the deadline.

A whole share gives you the complete animal. A half share gives you one side. Both get the same premium Akaushi beef and the same custom cut sheet experience. Key differences: whole shares are $12.00/lb (vs $14.00/lb for half), whole shares include organ meats, and whole shares get two of each single-per-side cut (two skirt steaks, two flanks, both brisket halves). Half shares require approximately 8+ cubic feet of freezer space; whole shares need 16+ cubic feet.
