Three Ways to Perfection

Akaushi liver is forgiving thanks to its marbling. These are our recommended methods.

Method 01
Liver and Onions
Soak in milk 30 min. Slice 1/2 inch. Dredge in flour. Pan fry 2 min per side. Serve over caramelized onions.
Pan fry → 2 min per side
Do not overcook. Pink inside is correct. Overcooked liver turns chalky.
Method 02
Pate
Saute with shallots. Deglaze with cognac. Blend with cream and butter until silky. Chill 4 hours.
Saute → Blend → Chill 4 hours
Process until completely smooth.
Method 03
Quick Sear with Sherry
Sear in butter 90 seconds per side. Deglaze with dry sherry.

The sherry creates an instant pan sauce.
