Three Ways to Perfection

Akaushi heart is forgiving thanks to its marbling. These are our recommended methods.

Method 01
Grilled Anticuchos
Cube, marinate in aji panca, vinegar, garlic, cumin. Skewer and grill 2 min per side.
Grill 500°F+ → 2 min per side
Do not overcook. Heart toughens past medium.
Method 02
Pan Seared
Slice 1/2 inch thick. Season. Sear 2 min per side.
Skillet 450°F → 2 min per side
Treat exactly like a lean steak.
Method 03
Slow Braise
Cube, brown, braise in stock and wine for 2 hours.
Oven 300°F for 2 hours
Braising transforms the dense texture into tender.
