How to Cook It

Three Ways to Perfection

Akaushi oxtail is forgiving thanks to its marbling. These are our recommended methods.

Method 01
Red Wine Braise
Sear deeply. Braise in red wine, stock, tomatoes, aromatics at 300°F for 3.5-4 hours.
Oven 300°F for 3.5-4 hours
Refrigerate overnight. Skim fat. Reheat. The flavor deepens dramatically.
Method 02
Jamaican Style
Brown, add allspice, thyme, scotch bonnet, butter beans, stock. Braise 3.5 hours.
Oven 300°F for 3.5 hours
Broad beans in the last hour.
Method 03
Pressure Cooker
Sear, add liquid. High pressure 50 min. Natural release.
High pressure 50 min
Reduce liquid after to concentrate.

The Tail That Tells the Whole Story

Oxtail is the ultimate expression of slow cooking. Each segment is a cross-section of vertebrae surrounded by richly marbled muscle and encased in connective tissue. Braised for hours, everything transforms. The collagen melts, the marrow enriches, and the meat becomes fall-off-the-bone tender.

Oxtail braised for four hours produces a sauce that no reduction and no amount of butter can replicate. It is collagen made liquid.
