Akaushi kidneys is forgiving thanks to its marbling. These are our recommended methods.

Method 01
Steak and Kidney Pie
Soak 2 hours in milk. Trim and cube. Brown with cubed chuck. Braise in stock and stout 1.5 hours. Top with puff pastry at 400°F.

The milk soak removes stronger mineral flavors.
Method 02
Deviled Kidneys
Split, season with mustard, Worcestershire, cayenne. Pan fry 2 min per side.
Pan fry → 2 min per side
A traditional English breakfast item.
Method 03
Braised in Sherry
Slice, sear quickly, braise in sherry with shallots 20 minutes.
Sear → Braise 20 min
Slightly pink inside or they become rubbery.
