Round Roast

Also known as Eye of Round, Bottom Round Roast · Boneless

A lean roast built for slow cooking. Braise it, pot-roast it, or slow-cook it until it falls apart. Akaushi marbling adds a richness that commodity round simply cannot deliver.

How to Cook It

Three Ways to Perfection

Akaushi round roast is forgiving thanks to its marbling. These are our recommended methods.

Method 01
Low Oven Roast
Season and sear all sides. Roast at 300°F on a rack until 135°F internal for medium-rare. Rest 20 minutes.
Oven 300°F → Internal 135°F → Rest 20 min
Slice as thin as possible against the grain. This cut rewards thin slicing.
Method 02
Pot Roast Braise
Sear, add stock and vegetables. Cover and braise at 300°F for 3 hours.
Oven 300°F for 3 hours
Add root vegetables in the last hour. They absorb the braising liquid beautifully.
Method 03
Slow Cooker
Sear first. Transfer to slow cooker with stock, onions, garlic. Low for 8 hours.
Low 8 hours
Shred the leftovers and toss with barbecue sauce for pulled beef sandwiches.

The Sunday Roast That Feeds the Week

The round roast is the practical cut. It feeds a family of six on Sunday and provides sandwiches for the rest of the week. In commodity beef, it can be dry and bland. In Akaushi, the extra marbling throughout the round changes the equation entirely.

Slice it thin for roast beef sandwiches that rival any deli. Shred it for tacos. Cube the leftovers for hash. A single round roast from an Akaushi steer provides more meals and more flavor than any grocery store equivalent.

A round roast from an Akaushi steer feeds Sunday dinner and Monday's sandwiches. The genetics stretch as far as the leftovers.
