Bold Meets Tender

The Sirloin

The Sirloin brings balance to the table. Cut from where the loin meets the round, it combines the tenderness of premium steak cuts with the deep flavor of hardworking muscle. It is versatile, flavorful, and always satisfying. Whether grilled, seared, or oven-roasted, the Sirloin delivers a steakhouse experience without compromise.

What You’ll Get

Each quarter share includes around 7 to 10 lbs of Sirloin, typically divided into Sirloin Tip, Top Sirloin, and Center Cut steaks. A half cow brings 15 to 20 lbs, ideal for mixing up your weekly dinners with lean, flavor-packed steaks. A full share offers 30 to 40 lbs, giving you plenty of options for grilling, slicing, or marinating. This cut performs well at high heat and is best cooked to medium rare or medium.

Why It Matters

The Sirloin is the workhorse of the steak world. It brings a great chew, a bold bite, and enough marbling to satisfy purists and home cooks alike. With a slightly firmer texture than ribeye or tenderloin, it is a favorite for those who love flavor and substance in every slice. It is a true centerpiece — approachable, honest, and worthy of attention.
