Slow-Cooked Strength

The Neck

The Neck is one of the most underrated cuts on the cow. Full of connective tissue, deep flavor, and old-world appeal, it shines when given time and heat. Perfect for braises, stews, and soups, the Neck releases rich collagen and hearty beef flavor that builds depth in every bite. It is rustic, nourishing, and rooted in tradition.

What You’ll Get

Each quarter share includes about 1.5 to 2.5 lbs of Neck. A half cow brings 3 to 5 lbs, just enough for a few unforgettable slow-cooked meals. A full share yields 6 to 10 lbs of Neck, typically cut into thick sections ideal for stews, bone broths, or shredded beef. It is best cooked low and slow until the meat becomes tender and the broth rich with flavor.

Why It Matters

The Neck is not glamorous, but it is honest. With rich connective tissue and deep marrow content, it brings real body to dishes that simmer for hours. It is a cut for those who appreciate patience in cooking and reward in flavor. Whether turned into a hearty ragù or a nourishing broth, the Neck delivers warmth, substance, and soul.
